Today’s little wonder is one of my favorites!! SUMAC
This dark maroon berry originates from mainly subtropical and temperate regions, like those of East Asia, Africa and North America ... there are also varieties that come from Southern Italy in particular Sicily where the tannin found inside is used in wine production.
In cooking it has adds a slight acidity and astringency. It reminds me almost of subtle apple cider vinegar.
We use it in many of our dishes and in our spice blend ZA’ATAR.
Sumac is perfect for adding that little fruity unexpected zing which is surprisingly brilliant when grilling on a bbq or adding to your rub before roasting. Add it to your favorite salad or dips.
